The Vegetable Jalfrezi

Our family is not a big fan of dried or semi dried curries at Indian restaurants. Yet, we ordered one the past month. I really loved it! My younger one liked it. So I decided I should try it at home!

I saw a video and followed step by step! I think that is a big mistake I made. Boy, restaurant style Vegetable Jalfarezi did have so much butter and oil. The vegetables were stir fried in butter and the onion and tomato along with the spices in oil. Together by the time it was done I was having a feeling of fullness.

Contrary to it being a dry curry my special one loved it and my younger son said it tasted like restaurant!

Anyway we had to loose all the calories and we just went for our trail walk after lunch!

This was our second day and we did two miles today. Yes, second day of our tiny challenge! Goal to walk out all 7 days of the week to jumpstart summer!

By the way, I didn’t take a picture of vegetable jalfrezi. But next time I will be taking a picture and the recipe would be a bit more customized to my family’s calorie needs 🤣!

Tomorrow I plan to take my son to a walk program at a new park. We have never been there. We will be walking with his friends. Will let you know how it goes!
